Tips & Tricks

For those of you doing your own baking, I thought I'd leave a few Tips & Tricks to try out.


General Tips

1. When trying a recipe for the first time, follow the direction exactly as provided. There me be a reason for  the precise mixing.

Cookies


1. Buy different sized Ice Cream Scoops to portion out your cookie dough. 

2. Start with the mid range time on a recipe. Adjust to less if it's too cooked. Adjust to more if it's not cooked enough.

3. Creaming the Sugar & Butter (or Crisco if called for) is best. Once you start added more wet ingredients it doesn't mix everything evenly.

Cupcakes

1. Use a measuring cup to portion out your batter. This will make all you cupcakes bak relatively the same size.

2. Cool completely before trying to frost.

3. Use Icing Tips for the best look of your icing. It also has more of a professional look.

Cakes

1. Cool completely before trying to frost a cake. If you don't, you could rip apart you cake, or over heat your frosting to a liquid.

2. After cooling and before frosting, refrigerate your cakes for at least 2 hours. This will make it firmer and easier to frost.

Icing & Frosting

1. Meringue based - If you've used that bowl for something else. Clean & Dry it well. The Meringue will not stiffen properly or sometimes not at all. Also do not use oil based flavors with Meringue.
